Three Nut Lemon Cheese-Less Cheesecake

Treat yourself to a delightful, guilt-free dessert beloved among KYN residents, whether as part of a dementia-friendly Christmas feast, or simply as a luxurious dessert to enjoy throughout the year.

What sets it apart?

No added sugar, a lineup of truly nourishing ingredients, and a generous serving of omega-3 fatty acids, giving your cognitive function a post-Christmas boost. Start the new year with a dessert that's both delicious and health-boosting!

INGREDIENTS:

Base:

  • 30g coconut oil, plus extra for greasing
  • 200g ground almonds
  • 100g walnuts
  • 150g soft pitted dates

 

Cheese-less “Cake” Topping:

  • 400g cashew nuts
  • 120g coconut oil
  • 100ml almond milk
  • 2.5 lemons zested and juiced

METHOD:

  1. Soak the cashew nuts overnight in water in the fridge or cover them with boiling water for 1 hour before starting the recipe.

  2. To make the base, blend together the coconut oil, ground almonds, walnuts, soft pitted dates, and a pinch of salt in a food processor until they form a crumbly mixture.

  3. Grease a tart case with coconut oil and press the mixture firmly into the base. Place it in the fridge to set for about 30 minutes.

  4. To make the 'cake', strain the soaked cashew nuts and put them into the food processor.

  5. Warm the coconut oil and add it to the processor along with almond milk and the zest and juice of lemons (keep a quarter of the lemon zest for garnishing). Blend the ingredients until you get a smooth mixture.

  6. Spread the prepared 'cake' mixture onto the chilled base evenly. Place the assembled tart in the fridge to set completely, which usually takes around 2-3 hours.

  7. Once set, garnish the tart with the reserved lemon zest.
