Mincemeat Christmas Cracker

Tristan Welch, KYN’s Executive Chef, has crafted a delectable recipe for you, thoughtfully emphasising fresh, seasonal ingredients, satisfying flavours, and a harmonious nutritional balance.

Embrace the festive season with a Mincemeat Christmas Cracker. It combines the natural sweetness of apples, the richness of mincemeat, and the crunch of nuts and seeds, all wrapped in layers of flaky pastry. Join in the joy of crafting this culinary masterpiece that promises to become a highlight at your Christmas table.

INGREDIENTS:

  • 4 apples, roughly 460g in total
  • grated zest 1 orange
  • grated zest 1 lemon
  • ½ level teaspoon ground mixed spice
  • ½ level teaspoon ground cinnamon

 

  • 225 g mincemeat
  • 150g marzipan
  • 50g pistachios
  • 50g walnuts
  • 50g chia seeds

 

  • hemp seeds
  • 50g unsalted butter
  • 50g ground almonds
  • 3 sheets filo

METHOD:

  1.  Preheat your oven to 180°C. Peel, core and dice the apples into a large bowl. Dice the marzipan and add to the bowl along with the mincemeat, orange and lemon zest, ground cinnamon, ground mixed spice, pistachios, walnuts and chia seeds. Mix everything well.
  2.  Melt the butter in a small bowl and have the ground almonds and hemp seeds ready.
  3.  Take the first sheet of filo and place it on a baking tray lined with non-stick paper. Brush it with the melted butter mixture and sprinkle one-third of the ground almonds and hemp seeds all over. Repeat twice with the next two sheets.
  4.  Lay the last sheet of pastry on top and brush it with butter. Place the apple and mincemeat filling along the pastry in the middle, leaving 4cm at each end. Roll the pastry into a sausage shape and scrunch the ends to resemble a Christmas cracker.
  5.  Brush the entire pastry with the remaining butter. Bake in the preheated oven for 30-40 minutes or until golden brown.
  6.  Serve the dish hot, accompanied by cold brandy butter.
