Strawberry Nice Cream

Tristan Welch, KYN's Executive Chef, has crafted a delectable recipe for you, thoughtfully emphasising fresh, seasonal ingredients, satisfying flavours, and a harmonious nutritional balance.

Strawberries are at their juiciest and sweetest this time of year, so now is the perfect time to try this Strawberry Nice Cream recipe. The key to a delicious nice cream is using over-ripe bananas. When you think they’re ripe enough, let them ripen a little bit more. This recipe is a fantastic way to enjoy seasonal fruit and use up those over-ripe bananas!

INGREDIENTS:

  • 4 frozen over-ripe bananas
  • 200g frozen strawberry
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger or fresh ginger
  • ½  teaspoon vanilla paste
  • juice & zest of 1 lemon
  • fresh strawberry ( for garnish)

METHOD:

  1. Hull and cut the strawberries in half.
  2. Peel and roughly chop the bananas.
  3. Spread the strawberries and bananas on a tray, keeping them separate.
  4. Freeze until solid, at least 6 hours.
  5. Place the frozen strawberries into a food processor and pulse until finely chopped, about 10 pulses.
  6. If the bananas are too frozen, let them thaw for a few minutes before blending. Add the slightly thawed bananas, vanilla paste, turmeric, ginger, lemon juice and zest to the food processor with the strawberries. Process until smooth, scraping down the sides as needed.
  7. Once smooth, transfer the mixture to a container. To prevent a hard freeze, wrap the container in an oven cloth to keep the texture soft for several hours.
  8. When ready to serve, scoop the smoothie mixture into bowls or glasses. Garnish with fresh strawberries.
